Fermentation is an historical way to preserve food. It allows food to “sour” which allows the food to stay safe to eat for months when refrigerated. Because of the way it’s preserved, it provides nutrients, probiotics and good taste. Don’t be scared. Fermentation isn’t a complicated process and with some basic instructions, you can’t go wrong. In class, you will sample several different fermented vegetables. You will be shown how to make sauerkraut, and ferment another vegetable. Vegetables like radishes, beans, cucumber, and jalapeno peppers are things you can ferment. After this class, the vegetables at the farmer’s market will be calling your name.
