“This salad is ideal with grilled tuna.  It makes for a great summer luncheon salad.”

Marinated Tomato Onion and Cucumber Salad
(yields 6 servings)
6 capri tomatoes, cut into thin wedges
1 unpeeled cucumber, sliced down the middle and cut into half slices
2 ribs celery, diced
1 small red onion, chopped
2 cloves minced garlic
Mix the tomatoes, cucumber, celery, onion, and garlic together and set aside

Dressing:
6 TB apple cider vinegar
6 TB olive oil
2 tsp agave
½ tsp granulated garlic
½ tsp garlic pepper
2 tsp dill weed
½ tsp sea salt
1 tsp dried oregano
In a blender, add apple cider vinegar, oil, agave, granulated garlic, garlic pepper, dill weed, sea salt and dried oregano.  Pour dressing over the vegetables and marinate for 4 hours in the refrigerator.
